Sweet Drop Biscuits – Keto/Low Carb

June is a month full of celebration for our family. We have an abundance of birthdays and get to celebrate the wonderful father’s in our lives.  My main squeeze’s Birthday falls just days before Fathers Day- double the fun for him!  Every year we forgo the traditional birthday cake for strawberry shortcake.  We’ve done pound cake, angel food cake and his favorite- the biscuit. This year, since he is following a low carb diet, it was time to perfect the low carb biscuit.

What I love most about these biscuits is how great they are by themselves.  Since I can’t have fruit, I was thrilled to eat mine with fresh cream. I also served them the following morning drizzled with Lankanto maple syrup and butter.

If you can have fruit (I am jealous!) these are the perfect biscuit for your shortcakes. An old family shortcake tradition is to butter the warm biscuit prior to adding your toppings.  I am certain your audience will have no idea these are missing the carbs.

These take minutes to whip together and bake. Don’t let the secret ingredient sway you- these are to die for!

Store in the fridge and you’ll be able to enjoy these all week long.

 

Sweet Drop Biscuits – Keto/Low Carb

Sweet Drop Biscuits – Keto/Low Carb

Ingredients

  • 1 cup of almond flour
  • 1 ½ tsp baking powder
  • 2 tablespoons of mayo (secret ingredient)
  • 2 tablespoons of coconut flour
  • 1 tablespoon for sweetener of choice- I used swerve confection sugar
  • 3 tablespoons of heavy cream
  • 1 egg
  • Pinch of salt
  • 1 tablespoon of melted butter

Instructions

  1. Preheat oven to 375
  2. Line baking sheet with parchment paper
  3. In a mixing bowl, combine all dry ingredients and mix
  4. Add mayo, cream and egg, mix until well combined
  5. Drop about a ¼ cup of dough onto parchment lined baking sheet, repeat for the remaining dough (4 biscuits)
  6. Drizzle each dough biscuit with your melted butter
  7. Bake for 15-18 minutes
  8. Enjoy!
